Summer barbecues and pot-luck suppers are upon us! This recipe for fruit salad with honey-mint yogurt is a great option for a flavorful, refreshing side dish. Serve it in a carved watermelon basket, and (according to my kids) it will taste even better.
To make a watermelon basket, just cut the melon as shown above. Then carefully carve the melon out of the basket “handle” and use a melon baller to scoop out the rest. There are a lot of fancier ways you can spruce it up, and if you’ve got the time and inclination you can really get technical and carve designs around the handle and basket top…but the basic shape is very easy to make and only takes a few minutes to carve. If you’d like a detailed tutorial, you can watch this video from about.com. Or, skip the fancy stuff and just put the salad in a nice bowl. Really, fresh fruit is beautiful however you serve it!
You can choose what type of fruit goes into your salad, according to what you like and what’s available. We used organic watermelon, canary melon, pineapple, strawberries and blueberries. Mango, kiwi, papaya, and honeydew would be wonderful in this as well!
I used a melon baller for the melons and just diced the rest of the fruit. Toss it together in a bowl…if you’re using pineapple, the juice will help any fruit that might brown stay fresh. If you’re using a watermelon basket, transfer the fruit salad to the watermelon shell and set it aside while you make the honey-mint yogurt.
The yogurt dressing is as easy as the salad! Chop some fresh organic mint leaves, and mix them in with plain organic yogurt. I like Greek style yogurt (here’s how to make it at home). Add some honey and stir it well…you’re ready to go!
Serve the fruit salad with the honey-mint yogurt on the side, or if you’d like you can toss the fruit salad with the dressing. The mint is refreshing, the yogurt is tangy and the honey adds just a touch of sweetness to the mix. Combined with fresh fruit, this is a side dish that might just become dessert (and even breakfast) if there’s any left after dinner!
