Does anyone else get in trouble when it comes to snacks?
By the time I realize that I’m hungry and dinner isn’t for another hour, often as not it’s already hit critical mass and I’m ready to devour whatever food I can get my hands on…healthy or not. I’ve learned that since I can’t always trust my self control at times like that, I need to be able to trust my pantry to be stocked with an emergency stash of delicious but healthy snack foods. Chipotle Cumin Roasted Almonds are a great snack to stock up on and enjoy on the run. They are savory and salty like other not-so-healthy snacks…but they won’t bring you down later with a junk-food crash or real-food regrets.
Snack Time Made Easy
All you need are organic almonds, extra virgin olive oil, and organic spices! The recipe calls for organic ground chipotle pepper, which you can find here, but you can also substitute smoked paprika. Putting this snack together is so easy, and it only takes a few minutes to mix it up and roast the nuts. Just drizzle olive oil over the almonds, stir to coat them, and then mix the spices together and sprinkle over everything as you stir. Once they are coated, spread them on a cookie sheet and put them in the oven for 20 minutes. Let them cool off, they’re ready to go! Store them in a sealed mason jar (like this) and store them front-and-center in the pantry. Next time you have a snack attack? They’ll be ready to go!
- Preheat oven to 350.
- In a large bowl, mix the almonds with the olive oil.
- Mix together the seasonings, then sprinkle them over the almonds as you stir. Mix well, making sure that the almonds are all covered evenly with the spice mix.
- Layer the almonds in a single layer on a baking sheet. Roast the almonds for 15-20 minutes, checking to make sure they don't get burned.
