Chicken Truffle Tajine

This recipe will knock your socks off with flavor and is so delicious. Seriously you'll love this chicken truffle tajine.
  • 1 tbsp grass fed butter or ghee
  • 1 lb chicken drumsticks
  • 1 onion, diced
  • Sea salt and pepper to taste
  • 1 pinch saffron (1 tsp turmeric can be substituted)
  • 4 cups homemade [fusion_builder_container hundred_percent="yes" overflow="visible"][fusion_builder_row][fusion_builder_column type="1_1" background_position="left top" background_color="" border_size="" border_color="" border_style="solid" spacing="yes" background_image="" background_repeat="no-repeat" padding="" margin_top="0px" margin_bottom="0px" class="" id="" animation_type="" animation_speed="0.3" animation_direction="left" hide_on_mobile="no" center_content="no" min_height="none"]chicken broth
  • 8 oz whole mushrooms
  • ¼ cup chopped parsley
  • 1-2 Tbsp Truffle oil
  1. Add the butter to a soup pot over medium heat and melt it.
  2. Add in chicken and onion with a pinch of salt and pepper.
  3. Saute the chicken until browned on all sides.
  4. Add in the chicken broth and saffron.
  5. Simmer the chicken in the broth for 30 minutes uncovered.
  6. Add the mushrooms to the pot and cook for 15 more minutes.
  7. Transfer the chicken into a serving bowl then top with a drizzle of truffle oil and parsley.
