Amazing Cauliflower Crust Pizza (Grain Free)

An incredible grain-free alternative pizza crust that's super healthy and delicious.
Serves: 6 8" pizzas
  • 3 heads of organic cauliflower, florets cut from stems
  • 1½ cups grated organic, raw milk mozzarella cheese
  • 1½ cups grated organic, raw milk parmesan cheese
  • 3 free range eggs
  • 1 teaspoon crushed organic dry basil
  • 1 teaspoon crushed organic dry oregano
  • 1 teaspoon organic granulated garlic
  • 1 teaspoon sea salt
  • ⅓ cup organic garbanzo bean, coconut or almond flour ([fusion_builder_container hundred_percent="yes" overflow="visible"][fusion_builder_row][fusion_builder_column type="1_1" background_position="left top" background_color="" border_size="" border_color="" border_style="solid" spacing="yes" background_image="" background_repeat="no-repeat" padding="" margin_top="0px" margin_bottom="0px" class="" id="" animation_type="" animation_speed="0.3" animation_direction="left" hide_on_mobile="no" center_content="no" min_height="none"]like this) (or omit and add an extra egg)
  1. Preheat oven to 450 F
  2. Process cauliflower florets in a food processor, pulsing until fine grains form.
  3. Place cauliflower grains in a microwave safe bowl, cook for 5- 7 minutes on high (depending on your microwave...look for steam rising from the cauliflower)
  4. Spread cauliflower out on a clean dishcloth or cheesecloth and allow it to cool enough to handle. You may need to use 2 cloths for this.
  5. Wrapping the dishtowel around the cauliflower, wring out the water as best you can. You might have to work at this for awhile, but it's worth it!
  6. Put the wrung-out cauliflower into a large bowl, and add the cheeses, eggs, flour (if using) and spices. Mix well.
  7. Line several cookie sheets with parchment paper. Pat out the dough in 8-10 inch circles on the paper, about ⅓ of an inch thick. You might want to create a bit of a lip along the edge of the crust, to better hold in the sauce!
  8. Bake the crusts in the oven for 8-10 minutes, until they start to turn golden-brown.
  9. Remove from oven, and top with homemade pizza sauce, grated raw milk mozzarella, and whatever all-natural toppings you'd like!
  10. Return to oven and bake until the cheese is melted and bubbly.
  11. Enjoy! Store leftover pizza in the fridge, wrapped in parchment paper.
